Abstract

Purpose

Digital transformation (DT) innovation is a monumental contribution that has had a profound effect on several worldwide industries. The aim of this research is to evaluate the current and future trends in DT specifically focusing in construction industry.

Design/methodology/approach

This study adopts a qualitative analysis approach grounded on descriptive and bibliometric analyses. In total, 283 papers from Scopus between January 2015 and April 2023 were retrieved in accordance with the Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA) review methodology. This study examines the publishing trends, most productive nation, university, publications and authors. Keyword co-occurrence analysis and thematic evolution were analyzed through Vosviewer and Biblioshiny.

Findings

The results illustrate a growing desire to use digital technologies in the construction industry, which shows the topic's power and expanding popularity. This research reveals various emerging themes based on technology usage in construction sector. Out of 14 themes, occupational health and safety, mass customization, virtual reality and artificial intelligence were identified as isolated themes. Further, this study elaborates the difficulties encountered by the construction industry while employing digital technologies and examines the interrelationships among various keywords in DT and reveals the paradoxes and hotspots.

Originality/value

This research adds to the body of literature as it identifies the research areas and gaps in the existing DT domain in construction industry. The integration of technology in this sector has an intense positive future vision as various subareas have immense potential for technology application.

Abstract

Purpose

This paper aims to study the effect of orange peel and moringa leaves extracts on microbiological safety, sensory quality, lipid oxidation and color properties of chicken sausages under frozen storage.

Design/methodology/approach

Chicken sausages were prepared by using orange peel, moringa leaves extracts and butylated hydroxytoluene (BHT). The sausages were stored in a freezer at −18°C. Samples were taken at a regular interval of 20 days from the day of production to spoilage of sausages and analyzed for microbiological safety, sensory quality, lipid oxidation and color properties.

Findings

In comparison to the control sausage, sausages having BHT, orange peel and moringa leaves extract had a significantly (p < 0.05) lower bacterial, yeast and mold count. All the sausages were microbiologically safe for consumption till the 100th day, and the results of the 120th day crossed the permissible limits. Sensory acceptability scores of sausages were good (>6) throughout the storage period. The color values of sausages were not affected by the addition of orange peel and moringa leaves extract. The extent of lipid oxidation increased during storage, and sausages with BHT, orange peel and moringa leaves extract had significantly (p < 0.05) lower values of thiobarbituric acid reactive substances and free fatty acids (FFAs) toward the end of the storage period.

Originality/value

The observations of this paper endorse the use of orange peel and moringa leaves extract in meat products formulation for acceptable storage stability under frozen conditions.

Abstract

Purpose

The purpose of this study was to optimize meat slices for processing attributes to produce better sensory features in developed products from buffalo veal and chevon. The processing parameters such as meat particle size, fat content and binding ability without chopping were the subject of this study.

Design/methodology/approach

The study involved three experiments where the particle size, fat content and tumbling time were optimized for optimum binding and improvement in different sensory attributes of product followed by physico-chemical analysis.

Findings

The sensory scores clearly indicated that meat slices prepared from 3 mm meat particle size, 10% fat content and 1 h tumbling time were having best sensory features. The selected product was analyzed for different physico-chemical properties. Emulsion stability and cooking yield revealed significantly (p = 0.01) higher values of 91.6% and 89.7%, respectively, in buffalo veal than in values of 87.6% and 84.9%, respectively, in the chevon product. Similarly the results showed that buffalo veal slices had significantly (p = 0.01) higher (17.4%) protein than the chevon (15.2%), whereas chevon slices had significantly (p = 0.01) higher (10.3%) fat content. The texture profile analysis indicated that cohesiveness (p = 0.01) and chewiness (p = 0.05) were significantly higher in chevon product than in buffalo veal.

Originality/value

The study was conducted to explore the buffalo veal as a potential source of quality meat, as majority of buffalo meat produced in India from spent animals have compromised quality attributes. The comparison was done with chevon, the most popular red meat in the country for the comparative study.

Abstract

Purpose

This study aims to investigate the effects of peers on corporate payout policies in one of the largest emerging markets – India. It also examines the motives for mimicking payout decisions.

Design/methodology/approach

The sample is composed of 3,024 non-financial and non-government firms listed on the National Stock Exchange (NSE) and Bombay Stock Exchange (BSE) for the period 1995 to 2020. To encounter the endogeneity problem, the instrumental variable technique based on peer firms' idiosyncratic risk is used to estimate the effects of peers on firms' payout policy. To define peer reference groups, the authors use the basic industry classification of the firms.

Findings

The results indicate a significant positive impact of peers on firms' dividend policies in India. A firm with all dividend-paying peers is more likely to declare dividends than the one with no dividend-paying peers. Further, peer effects are found to be more pronounced amongst larger and older firms, thus supporting the rivalry theory of mimicking.

Originality/value

To the best of the authors' knowledge, the present study is the first of its kind that attempts to understand peer effects on payout decisions in an emerging market India, that offers a unique institutional setting. Moreover, the authors extend the existing literature by investigating the peer effects on a firm's payout policies considering various firm-level characteristics, such as growth opportunity, cash holding, financial constraint and profitability, which previous studies have not taken into consideration. These results provide additional insights into the heterogeneity and motives behind peer effects.

Abstract

Purpose

Over the past few decades, lean manufacturing has focussed on being customer-centred and now Lean 4.0 technologies have made it possible for manufacturers to have a deeper view of waste reduction. Technologies such as the internet of things, artificial intelligence, three-dimensional printing, robotics, real-time data, cloud computing, predictive analytics and augmented reality, are helpful to achieve Lean 4.0. This study aims to develop the conceptual understanding of Lean 4.0, related tools and linkage with Industry 4.0. Further, it provides the strategies for implementing Lean 4.0, developing lean culture and highlights the Lean 4.0 application in the manufacturing context.

Design/methodology/approach

This study relates to Lean 4.0 and its technologies. Prominent research is identified through Scopus, Web of Science, ScienceDirect and Google Scholar and studied as per the objective of this study. This lean revolution provides customers desire for personalisation, connectedness, high-quality and valuable products. Lean 4.0 provides valuable information on the value chain and production process. This revolution has significantly impacted refining production processes for a greater level of adaptability and cost reduction.

Findings

This paper is brief about Lean 4.0 and its capabilities for the reduction of waste. The authors discussed different tools used in Lean 4.0 and its relationship with Industry 4.0. The classical strategies and progressive features of Lean 4.0 for overall enhancing the manufacturing sphere are discussed diagrammatically. Finally, it identified and discussed 14 significant applications of Lean 4.0 for manufacturing industries.

Originality/value

This study provides a comprehensive understanding of Lean 4.0 and related tools and strategies that help the upcoming manufacturing industries.

The purpose of this chapter is to present an economic perspective of how understanding individual decision-making can be impacted by transactional costs, and benefits in the context of gastronomic tourism. This chapter broadly discusses observable and perceived information search, bargaining and decision, policing and enforcement costs, and benefits in the context of gastronomic tourism in India. The proposed framework incorporates elements of Indian gastronomic offerings for tourists. Implications are discussed for future research and in the backdrop of the post-COVID-19 crisis.

Purpose

Internet of Things (IoT) involves connecting physical objects to the internet to provide opportunities to build smart systems or applications. IoT paradigm assumes many devices connected over a conventional intent network. These devices usually have restricted resources, so moving part of the service implementation to a cloud infrastructure is a prominent solution. This study aims to proposes in this project human voice as a potential interface for one or more devices in IoT ecosystem enabling issuing commands and receiving information.

Design/methodology/approach

System design is the process of defining the elements of a system such as the architecture, modules and components, the different interfaces of those components and the data that goes through that system. It is meant to satisfy specific needs and requirements of a business or organization through the engineering of a coherent and well-running system.

Findings

The main aim of this proposed work is to develop a ticket booking application that performs all the operations by speech recognition. Hence, visually impaired people can make use of this application. There are several applications that help visually impaired people. This application adds extra features to those available soft wares. Using this, visually impaired people can book the tickets without the help of personal assistants. For future research, this study hopes to extend this application to perform various other operations that will help visually impaired people to do their daily activities like normal people without the help of personal assistants. For example, making a phone call, sending text messages, booking a taxi, easy navigation, etc.

Originality/value

System design involves the identification of classes, their relationship as well as their collaboration. In objector, classes are divided into entity classes and control classes.

Abstract

Purpose

This paper aims to explore the application of drumstick (Moringa oleifera) flower (DF) as a functional antioxidative ingredient in goat meat product.

Design/methodology/approach

Dried DF was included in the product formulation at 1% (Treatment I) and 2% (Treatment II) levels. The physicochemical, colour, textural and sensory quality as well as storage stability of nuggets with DF were determined against control.

Findings

The dried DF was found to be rich source of protein and dietary fibre, possessing good antioxidant potential. Chromatographic analysis of DF extract showed presence of 14 active principles known to have antioxidative properties. Inclusion of dried DF decreased pH values of emulsion (p = 0.005) as well as nuggets (p < 0.001) and increased (p < 0.001) the ash, dietary fibre and phenolic contents. The added DF affected the product’s lightness (p = 0.017), yellowness (p < 0.001, hardness (p < 0.001), adhesiveness (p = 0.032), cohesiveness (p = 0.006), gumminess and chewiness (p < 0.001). Sensory characteristics of control and product with DF were statistically similar except low (p = 0.002) flavour score for Treatment II. DF inclusion lowered (p < 0.001) thiobarbituric acid reactive substances number and total plate count.

Research limitations/implications

DF can be used as a source of antioxidants and dietary fibre in goat meat nuggets to enhance their health value, functionality and storage stability.

Originality/value

Foods including goat meat nuggets enriched with goodness of functional ingredients like dietary fibre and natural antioxidants are gaining consumer’s preference globally. Inclusion of drumstick flower in goat meat nuggets significantly increases the dietary fibre and antioxidants making such products healthier and more stable. Consumption of goat meat nuggets added with drumstick flower is expected to improve consumer’s well-being as well.

Abstract

Purpose

This study investigates the impact of Industry 4.0 technologies on green innovation performance. In this relationship, the mediating role of green innovation behavior is also studied. Moreover, open innovation is tested as a mediator between Industry 4.0 technologies and green innovation behavior.

Design/methodology/approach

A quantitative research method is adopted in which a structured questionnaire was used to collect data from 217 manufacturing firms of Malaysia. After collecting data, the partial least squares-structural equation modeling (PLS-SEM) technique is applied to analyze data and test the hypothesis of study.

Findings

It is found that Industry 4.0 positively impacts open innovation which leads to green innovation behavior. Also, the former lays positive impact on green innovation behavior which leads to improve green innovation performance.

Research limitations/implications

The authors conclude that Industry 4.0 technologies can play an important role to improve green innovation performance of Malaysian manufacturing firms by managing open innovation for green innovation behavior which further improves the green innovation performance. In this context, it is recommended that strategists and policymakers should undertake the role of open innovation and Industry 4.0 technologies to promote environment-friendly innovations and to promote the green behavior in companies. The authors suggest hereby that firms should be given incentives to adopt and utilize Industry 4.0 technologies and collaborative innovation interactions – as they foster a climate for sustainable green innovations (which is also a key component to achieve competitive advantage) and a growing concern nowadays.

Practical implications

First of all the research contributes to achieving the broader of United Nations to promote sustainable innovation through green innovations. Moreover, the companies can also incorporate the findings and insights of this study while devising their policies to foster green innovations.

Originality/value

This research has done the novel contribution by bridging the gap between open innovation approach and sustainability fields while promoting green innovations in small and medium enterprises (SMEs). These two research fields are rarely studied in previous studies by focusing open innovation particularly. Hence, the authors suggest researchers to undertake these fields to further enhance the level of scholarship between innovation management and sustainability. Also, the authors recommend considering technological orientation and technological absorptive capacity of firms to improve green innovations. The current study has investigated the SMEs perspective in general irrespective to their sectoral differences, thus, for future researchers the authors suggest investigating the sector-wise comparison, i.e. electrical and electronics sector, chemical sector, etc.; or service and manufacturing sector differences.

Abstract

Purpose

Industry 4.0 refers to the interconnection of cyber-physical systems, which connects the physical and digital worlds by collecting digital data from physical objects/processes, and using this data to drive automation and optimisation. Digital technologies used in this revolution gather and handle massive volumes of high-velocity streams while automating field operations and supply chain activities. Cybersecurity is a complicated process that helps sort out various hacking issues of Industry 4.0. This purpose of this paper is to provide an overview on cybersecurity and its major applications for Industry 4.0.

Design/methodology/approach

The rise of Industry 4.0 technologies is changing how machines and associated information are obtained to evaluate the data contained within them. This paper undertakes a comprehensive literature-based study. Here, relevant research papers related to cybersecurity for Industry 4.0 are identified and discussed. Cybersecurity results in high-end products, with faster and better goods manufactured at a lesser cost.

Findings

Artificial intelligence, cloud computing, internet of things, robots and cybersecurity are being introduced to improve the Industry 4.0 environment. In the starting, this paper provides an overview of cybersecurity and its advantages. Then, this study discusses technologies used to enhance the cybersecurity process. Enablers, progressive features and steps for creating a cybersecurity culture for Industry 4.0 are discussed briefly. Also, the research identified the major cybersecurity applications for Industry 4.0 and discussed them. Cybersecurity is vital for better data protection in many businesses and industrial control systems. Manufacturing is getting more digitised as the sector embraces automation to a more significant level than ever before.

Originality/value

This paper states about Industry 4.0 and the safety of multiple business process systems through cybersecurity. A significant issue for Industry 4.0 devices, platforms and frameworks is undertaken by cybersecurity. Digital transformation in the Industry 4.0 era will increase industrial competitiveness and improve their capacity to make optimum decisions. Thus, this study would give an overview of the role of cybersecurity in the effective implementation of Industry 4.0.
